Now back to Reality in Las Vegas


Here for a Family Business Conference. So while the TEAM is attending different presentations, I am left to explore. Haven’t gotten hooked up with any Yoga yet, but I’m not givin’ up (listenin’ to country music ;). Got my nails done and got a demo of a product that’s like a colored talc that covers the gray and went on the hunt for an Organic Veg. lunch which lead me to Kathy, the Bell Cap’t at the Riviera, who suggested that Trader Joe’s was easier to get to. I also discovered a wonderfully organized Used Books store that had some exciting books on Food and Health.
I did find some goodies and the pictures will show the result of my finds.

For the SALAD, I bought:
Org. Spinach
Edamame Hummus
0% Oikos Yogurt

I had these ingredients:
Apple -1 chopped it up (with the skin of course)
Sundried Tomatoes in Oil – cut them up w/a scissor
Salted Almonds – crushed them with the tomatoes jar

In a small bowl (the one I used to eat the salad) I mixed some of the HUMMUS, OIL from the jar of Tomatoes, YOGURT – as my dressing. Mix in the Spinach to coat it and add all the other nourishing items sprinkling the Almonds on last, and just love it as you take bite after bite.

I had a partial loaf of a Cranberry and Macadamia Nut loaf that I thin sliced 2 pieces and topped with e SOY-SATION Shredded 3 “cheese” blend and put under the broiler til browned. YUMMM

And all this at the beautiful Hilton Grand Vacation Club PH Suite. Can it get any better than this? It’s close to 100F outside so I’m inside working and staying cool.

HAPPY MOTHERS DAY every day.

Traveling is so adventurous in many ways. There is, new landscape, then new or different cultures than you are not used to. The food and drink are not your usual either. The weather is always a consideration. It seems that whatever plans I make, it works for me, otherwise I change MY plans. What’s that saying? While you are busy planning, God is laughing. Today, the wind is topping 40 mph. It is not my fave, so I will be doing what I must, write my blog. I was going to “recargare”, means, put more money on my SIM card and of course go to the Open Market to food shop. Where am I, you ask. I am in the North of Italy, a wine region that those lovers of Tuscany might never experience and surely is amiss in their itinerary – Oltrepo Pavese, specifically the village of Cigognola. I am exercising my creativity by finding MY favorite ingredients and creating with them healthy dishes that my friends have never tasted before. What can I say? I am a creature of habit, as most of us are. Through the experiences and adventures we’ve lived, we develop our likes and dislikes and some of us, sometimes are open to try new things. But, in saying this, my friend is feeling that this style of eating is going to bring down his cholesterol, and that’s what my creating is all about. He’s convinced he’s lost weight already, and that’s a very good thing. His wife is so relieved to get a break in the kitchen and I’m so happy to oblige. I scoured the store with their daughter to find the things I want and she buys what she likes. In honor of MOTHERS DAY I am making my Oma’s Chicken Soup – or my interpretation of it. Oma was my beloved maternal Grandmother, who taught me how to cook even though I hated food when I was younger. Fortunately, my kids didn’t inherit this, but my bros’ little one did. Oh boy, I know it can’t be any fun. I remember my Dad having this great idea, to put me in the bathroom to finish my food. Since they didn’t raise a dummy, I realized that I could just make a lot of noise and flush it all down the toilet. Freedom 🙂
In the meantime, I did eat this and it was a favorite of mine. Today I suggest that Kosher or Organic is to your BEST interest but it’s your choice.

The wonderful ingredients I used: (the words after the = sign are ITALIAN)

A whole Chicken- wash in and out = Pollo
Cut up 4 sticks of Celery w/leaves in 4 pcs.=Cedano
Large Onion peeled and cut in half =Cipolla
Some Parsley wound in thread-Prezzemolo
4 Carrots – org. so need to peel=Carote
Salt and Pepper of your preference – there are many Salt Substitutes in the market – to your taste – put less than you think, you can always add more during the cooking. If you have to control your salt intake, buy FRESH FOOD NOT PREPARED, that will take care of it =Sale e Pepe
1 or 2 Bay Leaves- depends on the size of the Chicken. I break it in 1/2 to help release the flavor= Lauro

Put in a pot, bring to a boil, lower heat to simmer an hour, PARTIALLY COVERED.

THE WHOLE house will have a scent of your childhood, when your Nonna made it for you, back then.

Skin and debone the chicken, and put away. Take out all the vegs. and put with a little broth in the blender, Cuisinart, or whatever you use. It will come out like cream of celery and taste awesome (use it for BABY food, or an elderly person, that can’t chew). The Broth is nice served with Brown Rice or any other grain that suits you and Chinese style Mustard and Crunchy something as well as chopped Bok Choy or Savoy or Nappa Cabbaga (whatever you have left over). The Chicken, well you can make: Salad, Fajitas, Quesadillas, Stir Fry, etc. See, you can get get several meals out of this one soup.

MY beautiful daughter wrote a quote from J. Churchill “There is no way to be a Perfect Mother, and a million ways to be a great one”. LOVE IT.

On the Road to….


Enhancing my Spiritual side in Sedona with our Spirit Journey guide and long time friend, Satori. We’ve known each other for 15+yrs. as she goes with the flow and I go on my path. She took us hiking, climbing, did energy healings, introduced us to some “Amazing Spirits”, such as the famous American Indian flute player, Mockingbird and an equally well known Stained Glass artist, James. Satori made a fab vegan lunch – recipe to follow. The hikes lead us to SPECTACULAR views.

The food for breakfast that we consumed to give us the most energy for our hike was a really devine

WHITE SWEET POTATO w/OO

I washed and then baked it in a Toaster Oven (this red skin potato) at 450F 45 min.
Took it out to cool for a few minutes, split it and added the OO

Satori also made baked Sweet Potatoes (the Orange skin and Flesh ones that everyone enjoys)

but she had these Korean Rice Balls as well. This is the way I made them. The products I used:

PURPLE STICKY RICE or regular STICKY rice – cook according to directions on the package

TOAST NORI PAPER-cut in little pieces with a scissor

SESAME SEEDS- toast too- you can put them in a dry pan, med fire BUT keep your eyes on it

When the rice cools down a little, make the balls mixing in the Nori, then roll them in Sesame Seeds

Use like a Ponzu Sauce for dipping. ENJOY now.

What gets YOU moving!?
I (this is my blog, after all!), LOVE music. Happy, upbeat, dance music, soft on the heart and mind, but cranked up loud, especially in my little sports car, with the top down, or just the windows down.

When I lived home with my parents and had to do my chores, you wouldn’t believe what I looked like – wish I had a picture to show you all. Music in my ears(the newest thing at the time- you had to be from that era).

Gym(as we called it) was yech (for some of us)!! I never ate much, so being young, I looked good- that was enough for me! What did I know? Everything (or so I thought). Let me get back on track (pun intended). F.I.T. = face it today. You cannot and will not be able to live that reality in your 40s, 50s, and I suspect later on as well, doing business as usual in the fitness department takes commitment and dedication. Couch potaoes should apply.What I mean by that is, your lifestyle is so different perhaps than when you were a young adult, that aging chemical reactions, such as hormones, vitamin and mineral retention like collagen (you’ve all may have heard of that) have diminished to some level. Now to make the recipe for aging more complete, these are some of the most important components you will need:

Life – you just keep having birthdays
Mental condition – a bit tired these days Physical shape – not what it used to be Emotional condition – full baggage

So the good thing is we’re NOT like dogs!!! We can learn new things when we’re older.
I prefer to look at aging as good because the alternative isn’t. I also believe it is good to be striving rather than merely surviving. One great example I live with is that next month for his 65th my husband is climbing to Base Camp of Mount Everest. In His mind he’s fit an prepared for this. I equate this to 100% intention. Ask any athlete, this is key along with preparation. Of course, it helps that he looks at the skinny mirror at home, and as he puts it, I look at the fat mirror.

Henry Ford said it best: ” if you think you can, or if you think you can’t, either way YOU are right” – think about all the choices you make and apply this thought.

LOVE KNOTS/NOTS


Overall health is all of your physical, mental, emotional and spiritual components. Intangible (to most) occurrences when you are a living human being. I’m reading Iylana Vanzant’s “In the Meantime”. So let’s talk about LOVE. It affects us on all these levels – butterflies in your stomach when they call, a stomach pain when they don’t call. There are many lessons in love. A particular one is that you better really love yourself BEFORE you enter into any relationship. You can always get HAPPY from the outside -winning anything for example, makes us very happy – temporarily, anyway. But JOY comes from the inside. They cannot make you feel anything, til you allow them to. This is so difficult when you’re in the throws of a feud or something with the one you love.

Another good lesson is that THEY are not your Better Half-as many tend to say of their partner/spouse. In a fulfilling relationship YOU ARE A PARTNER. Each has strengths and weaknesses. Your partner should be willing and able to help you cultivate your strengths and develop or eliminate the weaknesses. You can bring AND share your sense of who you are, the value, excitement, passion and purpose you bring. You must share your vision and your abundance of all that you bring into the relationship without the fear of them taking it away from you.This is the definition of LOVE. Ms. Vanzant writes that “you cannot GET love from the outside til you ARE love on the inside”. Simply said, difficult in practice, but practice we must if we want to play in this lifetime. Without a manual, this is it. We make up rules, we listen to others. We leap from a mess, look and find LOVE again, make another mess, til we learn this one lesson- she puts it so well -“Love is our Peace, neither life nor love require us to give up our dignity, self-worth, career, favorite TV show or that good common sense”. When you’re in pain in your relationship, you try to move forward, but like constipation, nothing happens. If you don’t work things out, the relationship becomes more toxic, further poisoning you with insults, turning everything into raging anger, a small argument will lead into the long silent treatment, small hurts become deep wounds. Vanzant puts it straight -“ambivalence, confusion, reluctance, and paralysis, are all characteristics of THE MEANTIME”. That’s where we live, mostly in The Meantime.
What happens to your self-worth when there’s no trust? Admiration and respect go out the door and are replaced by a slow shut down of all of that joy that you came in to share, where nothing is fine, especially not you. All those are intangible things, yet they shape the way we feel, act, sleep, eat, drink, even go to the bathroom(but that’s a whole ‘nother blog.

For today’s recipe, you will need:
COURAGE
STRENGTH
SELF ESTEEM
FLEXIBILITY
FEELINGS

Feel your feelings. Are you angry, afraid, fearful, sad, hurt? This is NOT what love feels like. Check the mirror – you can do it. Now take courage and add strength, stir till the self esteem is back. Be flexible with yourself and those in your relationships, because they might not recognize you and you might even scare yourself, that you were actually hiding in there. They might not even like the new you. You have new rules and guidelines by which you’ll conduct yourself and allow others conduct to exist, as you set the new boundaries for respect and tender loving care (further herein referred to as TLC). Compassion and Passion is what you’ve just cooked up. So be proud and strong. This recipe maybe repeated over and over throughout your lifetime.

BLOG BITES. What is this? It’s a Momelet


Lots of food left over in our PH Suite at the Hilton Grand Vacation in Vegas. So what to do, hmmm? Let’s see what’s in the fridge…

ORG. Eggs
Org. Baby Spinach (raw in a bag/box)
Sundried Tomatoes in OO
Soy-Sation “Cheese” Alternative
Cranberry Macadamia Nut Artesian Bread – fresh from a bakery (any flavor YOU like can be used)

Wet the Spinach, throw it in the fry pan on Med-High, cover to steam for a couple of min. til wilted Cut up the Sundried Tomatoes – a scissor works best.
Take Spinach off the pan-place on 1 of the plates you’ll use to eat.
Put Sundried Tomatoes in pan with a little of their oil to crisp up, maybe 3 min.
Put in 3 eggs (for 2 people) and stir up til almost cooked to your liking, add Spinach back in to incorporate. Now that it’s done, sprinkle the Soy “cheese”, cover and turn off. Let it’s own heat melt it and in a few minutes when you take the cover off, it will have fluffed up just like an omelet.
While you wait, slice the bread and toast it nicely, then drizzle some of OO from the Sundried Tomatoes on the toast. Now portion the Momelet on and savor the flavors without any condiments 😉

Vegetarian Spinach Cakes


So, it’s not that I haven’t been preparing, cooking nor eating this past week. But I will tell you that blogging is like exercising for me. You have to get used to making time for it and you HAVE to practice writing the blog posts. So, I commit to you and me, that I will be more diligent and focused. For Easter we went out but I made some really good Spinach “cakes”. They’re more like a “burger” or pattie than a “cake”. So this is what you need to make these tasty morsels:

2 lbs. fresh SPINACH – I get the 1 lb. Organic box at COSTCO – the most cost effective
1 med. ONION – minced- I use a gadget for this
2 TBSP OO
2 EGGS beaten
2 TBSP GARLIC minced
1/2 a WHITE SWEET POTATO (red skinned and big)- mashed and cooled(I had this from breakfast the day before. Use what you find in your kitchen)
4 oz. VEGGIE GRATED Parmesan FLAVOR Cheese Alternative – from the Produce area
1 tspn fresh ROSEMARY minced
1/2 cup fresh breadcrumbs ,plus for dredging- I don’t buy bread(I just bring it home when we eat bc they’re supposed to throw it away) I freeze it to use for this purpose. Just toast up really crunchy and cool before putting in Cuisinart to make the crumbs
S and P to taste

This is what you have to do:

OVEN @ 350F

Combine all ingredients and form into patties, dredge in additional breadcrumbs and sautee in small amt. of OO. When completed put on a cookie sheet in oven for 20 min. Until hot inside. I served it with beautiful Florida avocado slices. Or you can use a LITTLE BIT of homemade tomato sauce.
We picked the tomatoes fresh and Organic from the Farm.

Passover “Chopped Vegetarian Liva”


I want to share with the good folks celebrating Passover this delish dish. A WARNING = it’s soooo good that you might want to eat the entire portion without sharing, but that’s not what this holiday is about.  My friend sent me a text that sums it up: “It’s a time to organize the drawers of your heart and Spirit to get rid of all the things that got sour. Rise above your difficulties and open your soul to bloom again”. When you want to eat this, close your eyes and open your mind and take a taste and then another and another. I’m sure your soul and your Spirit will rejoice.

THIS IS WHAT YOU NEED TO MAKE THIS DELISH DISH:

6 TBSP  Vegetable Oil

3 ONIONS chopped

1  3/4 cups frozen EDAMAME

1 cup GREEN BEANS

15 WALNUTS

3 (peeled) Hard Boiled EGGS

Salt and Pepper to taste

THIS IS WHAT YOU DO WITH IT ALL:

Heat the oil at MED heat, when all silky, add Chopped ONIONS (my son, the Chef, said to always put a little Kosher Salt to sweat the onions, which brings out their sweetness.  Cook until soft, add EDAMAME, GREEN BEANS, Salt and Pepper. Continue to cook until the Green Beans and Edamame are not so green anymore.

I let the ONION mixture and Hard Boiled EGGS cool a bit and then put in FOOD PROCESSOR, add WALNUTS and mix until it looks like a rough paste. Add a little oil if it looks dry. 

Serve with your favorite Matzo.

LIVE THE LIFE YOU LOVE

THE ideal choice if you’re seeking an ENERGY drink


I didn’t get much sleep last night and so I’m turning to my trusty ORIGINAL Homemade ENERGY drink. I use a VITAMIX to make this, but there is similar equipment out there now, (mine’s ancient -but hasn’t broken down)

So either do this as a cleansing because you’ll have plenty or use up with in 3 days.

To get the most out of this drink, you might say “how much you love this drink” BEFORE you drink it and that you know how nutritious and good it is for you. It really works, especially if you’ve never done this before. You brainwash your tastebuds (and your mind too 🙂

The possibilities are endless, but there are some key ingredients that you should always mix in and I’ll tell you why as we go down the list:

WATER – without it, the result is a very rough puree.  How much will depend on how much you want to make and also how thick you like it. Start with a cup of the best filtered water possible and then add on to thin out or to make the taste milder.

DARK LEAFY GREENS – depends on how much you want to make – I tend to overdo it and then my Mom gets to share with me. I use what’s left in the fridge from the weekend foodstuff unless, there’s nothing left and then I shop fresh – that’s the best. So start small and then add more, also depends on the size of the leaf. These LEAFY GREENS can be:

KALE-any kind and color, COLLARDS, SPINACH, DANDELION Greens, BEET greens, CHARD-any color. NOT all of these, pick one to buy and always change it up. I do always use Spinach with the other greens. ORGANICS for ALL. After ALL, you are not a going to be cheap-out on yourself.

CELERY – inc. tops (again, the amt will depend on your juicer). PARSLEY – I prefer FLAT LEAF – the whole bunch or 1/2, depending on room, because we have some more to add still.

AVOCADO – because you need good fats- I use 1/2 because I eat  OO and other fats throughout the day.

DULSE FLAKES (a SEAWEED product) I get at Whole Foods – a small handful- so good for your THYROID

some sort of veggie type protein: HEMP SEED is good and I prefer the nut vs. the powder, a small handful as well.

LEASA is a brand of Asian products sold in the vegetable section of the Supermarket and they make SNACK SPROUTS – versatile, crunchy and fun to use in many recipes. So use 1/2 the box and save the rest for later use (in a salad or as decoration over HUMMUS-YUMMY).

LEMON – Squeeze it in, GINGER (I peel it) – depending on your tolerance for spicy, put a thumb size piece 1st and then adjust to taste. IF you already run hot as a body type, limit the amt. APPLE with skin and all.

Ask you can see, I like to pack it all in. I drink this during the week as I go to run errands or after workouts and use it as you might use coffee. It may not be a quicker-picker-upper, as you have to wash all the vegs well and put them in the Vitamix, but the ONLY side effects is that you will have a great BM due to cleansing of your intestines. Dis-ease is started in there (gut), it’s a well known fact. When your body doesn’t get enough nutrition, it needs to cleanse. Your body may slow down, you might be getting backed up (you know what I’m talking about!!), your organs will start to malfunction and guess what?? INFLAMMATION will set in. NOW you’ll start getting ACHE S and PAINS, your WEIGHT goes UP!!! Skin coloring changes, WRINKLES appear = signs of Aging. It’s just signs and indications that you need to rebuild and rejuvenate before you become so toxic. You’ll start to take over the counter meds and then a presciption, followed by another to undo the symptoms of the first and the merry-go-round continues.  IF you feel you need to cleanse after reading this paragraph, may I suggest that you do it simply, daily, slowly, it’s the best approach. You’ll feel satisfied and you’ll get relief too. PREVENTION IS THE SECRET. CURING illness may not happen, but preventing it sure works for us.

HYPOCRATES said somehting about Letting food be your Medicine, and I KNOW he was onto something there.
